The Cooperative Oil Mill Cima di Bitonto has been operating since 1960 and produces, with care and dedication, extra virgin olive oil that comes from a blend of two olive varieties: 70% of Ogliarola cultivar and 30% of Coratina cultivar.

The oil production begins with the hand-picking in the last ten days of October, the delivery of olives to the mill every evening, the cold extraction within twenty-four hours, and the use of the most modern means to obtain a high-quality, authentic and hygienically safe extra virgin olive oil with a very low degree of acidity.
